
Hello!
I hope you’ll feel at home here, because I assure you this is a place where you are welcome and encouraged. Beaming vegan aims to establish a friendly, judgement-free and positive community for new vegans, the vegan-curious, and everyone else who may find themselves here.
So what am I doing with this platform? My purpose is to provide the utmost support and encouragement to new vegans, share 2 years worth of vegan expertise and resources, spread unconditional love in a not-so-loving environment, test vegan foods and provide tried and true recipes, and build a community on a foundation of pure intentions.
I’ve been vegan for two years and vegetarian for a short while before that. I teach veganism to new vegans and those considering making the transition to veganism. I wholeheartedly believe food is medicine and the future is vegan. I dream of following a HCLF mostly raw vegan diet and until then I’m savory every bite of homemade cake and mac and cheese. My biggest dietary value is cooking at home, making homemade meals and treats from 100% plant-based, mostly organic ingredients.
Let’s get to know each other!
My partner and I moved from a 160-acre Kansas farm to the heart of Spokane, Washington in November 2017. We had a fully furnished big farmhouse with all the creature comforts, a 30ft camper, and an extra (third) car and we gave it all away and moved into our Washington home with a minimalist mindset. I dreamed of being in the mountains but didn’t have my heart set on certain ones, and now I’m conflicted wanting to live in Spokane, Seattle, Snoqualmie, and Coeur d’Alene. And I haven’t been to Portland yet, but I betcha I wanna live there too. I’m thinking RV life will fulfill all of these desires, but just like myself, you’ll have to stick around to find out!
We are a couple of ex-hunters, formerly eating everything from wild rabbits to snapping turtles. We raised our own rabbits and chickens for eggs and to butcher and were avid fishers, spending all of our free time casting into lakes and ponds. Even as a vegan I’m thankful I went through this phase of life because I do believe it gave me a really broad perspective and greater appreciation for veganism. Luckily we’ve always taught ourselves to garden as well, to sustain this plant-powered lifestyle! One time in a nutrition class (or environment? I don’t remember) I was literally praised by the instructor for butchering backyard animals and gardening and living on a corn-growing farm so I could survive if grocery stores weren’t available. I was proud. *Insert eye roll*
I’m an enneagram type 7 (wing 5), and Sagittarius with Virgo rising (hello, body awareness and intuition).
If I could live on hemp milk lattes and avocados I would 100%. I thrifted nearly everything I own… I’m a garage sale junkie. I’m completely in love with my chocolate lab and brindle boxador. We also have a peaches-and-cream colored cat, Helius who was supposed to be a barn cat at our house in Kansas but I couldn’t stay away from him and now here he is in our Washington home. I have a cow collection scattered throughout my house, I think they’re the cutest creatures in the world. I have a degree in business administration I don’t plan to use. I’ve worked the weirdest variety of jobs from being a daycare teacher-> trauma registrar & medical records clerk-> Claire’s store manager-> operating a small post office (my favorite!). I’ve always had an intense passion for snail mail, and now I can add a love of USPS onto that passion.
I’m the kind of girl to choose camping in the mountains over lounging on the beach 100 times over. I’ll repeat: Mountains > Beach. My partner, our dogs and I spend all of our free summer nights in a tiny tent we like to place all over the Pacific Northwest. In the winter you can find us savoring everything Spokane has to offer or bundled up on a hike.
