One Pan Vegan Sausage Bake

An easy, cozy, delicious meal for prepping lunches in advance or warming up on chilly nights!

Servings 2 people


  • 3 Field Roast Italian Sausages
  • 3 cups quartered brussels sprouts
  • 1 medium diced sweet potato
  • 1 tbsp plant based butter (I use Earth Balance or Melt)
  • 1 tbsp olive oil
  • a few sprigs of rosemary, thyme, or parsley


  • Preheat oven to 365
  • Slice brussels sprouts, potato, and sausage
  • Toss brussels sprouts in olive oil
  • Arrange sprouts, potatoes, and sausage on pan/baking sheet
  • Place in the oven and bake for 15 minutes
  • Remove from oven and brush potatoes with butter and garnish with herbs
  • Place back in oven and bake for another 15 minutes
